Description

Easy cinnamon apple cake features soft, spiced cake filled with chunks of sweet apples and topped with a light glaze. It’s an excellent choice for dessert or a cozy afternoon treat.

Ingredients

Scale
  • 1 ¼ cups chopped apples (peeled, approximately 2 medium apples)
  • ¼ cup softened butter
  • ¼ cup sugar
  • ¼ cup dark brown sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract
  • 1 and a quarter cups all-purpose flour
  • ½ cup chopped walnuts

Instructions

  1. Start by preheating the oven to 350°F (175°C). Prepare a 9-inch round baking pan with non-stick spray or butter for easy release.
  2. In a large bowl, combine softened butter, granulated sugar, and dark brown sugar. Beat until the mixture is light and fluffy, which should take about 2-3 minutes. Add eggs one at a time while mixing well after each addition. Incorporate vanilla extract into the batter.
  3. Take another bowl to whisk together flour, baking soda, ground cinnamon, and salt thoroughly. Gradually mix these dry ingredients into your butter-sugar blend on low speed until just combined.
  4. Gently fold in chopped apples and walnuts ensuring they are evenly distributed throughout the batter without overmixing.
  5. Pour this rich batter into your prepared baking pan; spread it out evenly across the surface before placing it in the oven.
  6. Bake for approximately 40-45 minutes or until you can insert a toothpick in the center that comes out cleanly without any residue attached to it.
  7. Let your cake cool down in its pan for about 10-15 minutes before transferring it onto a wire rack where it’ll continue cooling completely.
  8. Slice up your cooled cake into wedges ready for serving; consider pairing them with vanilla ice cream or caramel sauce for an added treat if desired.

Notes

Use sweet apple varieties like Honeycrisp or Gala for better flavor. Keep leftovers in a sealed container at room temperature for three days.
